Twas The Night Before


Well, here we are the night before May 24th.  I have been getting things ready, things aren’t perfect but they are good.  I wanted my house to be immaculate, LOL, it’s not.  Last time I went into surgery I stayed up until the wee hours of the morning making my house perfect, I’m a little more overwhelmed with this procedure and don’t care enough to stay up all night.  So no, my house is not spotless by any means but I must say I did scrub my refrigerator out and it looks good! 

Today I got to go to the hospital and do some labs.  It was kind of cool, I signed all my paper work and I am all signed in for tomorrow.  They even put my little wristband on, so all I have to do tomorrow is show up and they scan my bracelet thing and we are good to go!   
  We have to be there at 5:45 a.m. how fun.  
I get to be the first patient of the day!  
 My cute husband knew how nervous I was about everything, so he spoiled me and got me flowers and balloons.  He’s such a nice boy!   

 I have my snack shelf in the fridge.  Plenty of pudding and fruit.
I have my books from the library!
My neighbor is lending me a box of musicals!
And my little rescue dog is all ready to be there when I need him!
So things are set up for when I can come back on Friday.  Well, I am sure I will think about my house and everything I didn't clean---but I will just pretend that doesn't exist.  
So ya: ready, set, go!  
I am ready for them to take Fred out. 
(I named my tumor Fred.  I didn't like saying the word "tumor", it just sounds better to call it "Fred".)
When I feel well enough, I will post to let you know how it went!

Focaccia!


A few weeks ago my husband made some focaccia.  I shared it with some neighbors and the secret was out, my husband is an amazing cook and he makes dang good Italian food!  My husband has a passion for food!  He loves the tastes, the smells and the socialization that food can provide.  While he lived in Italy he invited himself into every kitchen he could to find out what was cooking and how they made it.  The pasta mammas of Italia shared their secrets and as a result he makes amazing focaccia bread.  After the neighbors had some, a night was quickly organized and my husband was asked to give a demonstration on how to make focaccia bread. 
  
Key ingredients for the dough:
 When cooking Italian food you only use Extra Virgin Olive Oil! 
(or like Rachel Ray calls it, EVOO)  
 If you use ANYTHING else, it just doesn’t taste the same. 
Salt.  Sea salt is a good choice, but we just love kosher salt! 
For yeast we use the kind that comes in packets.  
 
First you are going to get a bowl and dump 2 packets of yeast in.  When my husband did the demonstration he used a packet and a ½, I like to use both the packets so I don’t have any random left over half used packets.  Your bread will just rise a little bit more if you use both, not a big deal.  
 Then add 2 cups of water.  NOW LISTEN, this is more crucial than you might think.  I have messed this up before.  You DO NOT WANT HOT WATER, but you do not want cold water.  You want luke warm to warm water.  Just get it from your tap but make sure it is not too hot.  

Stir the yeast into the water until it looks like it is a consistent color.  I like to add all my wet ingredients together first.  Next I add in 6 teaspoons of extra virgin olive oil.  It is Italian food, you can add that specifically or you can eye ball it.  Even if you mess up and use a tablespoon instead of a teaspoon, it doesn’t matter.  That is the best thing about Italian food is you just kind of improvise.  Then I add in 2 teaspoons of kosher salt and 1-1/2 teaspoons of sugar.

Next we are going to add a total of 5 cups of flour.  I like to add 2 cups, get it all stirred in and then add the other 3.  Once you have all of your cups of flour dumped in, you need to knead it.  It will be sticky at first, but the more you knead it, the less it will stick to your hands.  If after about 10 minutes of kneading it is still sticking to you, add about a teaspoon of flour.         

Oh, I forgot to tell you my husband’s theory.  He is convinced, if you listen to Italian music while you are making Italian food it will taste better.  He highly recommends Andrea Bocelli’s album Romanza.  It is his favorite and his secret ingredient!   The food just feels more at home if you create an Italian atmosphere!    

With Andrea Bocelli blaring in the background and your dough all kneaded, it is time to get a towel and cover it.  Let the dough rise for about a half hour.  
Check your bread after 30 min, it will be noticeably bigger.   
Now it is time to punch it down.  
Literally punch it down.  Knead it again and try to get the air out of it.  Once you have finished, place the towel back on the bowl and this time place it in the refrigerator.  It needs to stay in the fridge for a MINIMUM of 2 hours.  The recipe we use says you can chill the dough for at least 2 hours but no longer than 48 hours.  

When it is time, pull the dough out of the fridge and prepare your cookie sheet.  To grease the cookie sheet my husband pours olive oil on the pan and uses a paper towel to push it around making sure he covers everything even the corners. 
Next he sprinkles some flour onto the cookie sheet.  
 Now time for the dough!
Knead it a little bit and if you think it needs some more flour feel free to add a bit more.
 It is going to be cold and stubborn, but the more you work with it the warmer it will get and the easier it will be to form.   
 Don’t worry about a rolling pin, just use your hands and keep working it until you have covered the entire cookie sheet. 
   Now use your fingers and thumbs and poke holes all over the dough. 

 See that little slimy hole, it is optional if you would like you could put extra virgin olive oil on the tips of your fingers as you make the holes.   
Next he takes a fork and stabs the entire top of the dough.
The purpose for making all of these holes is so when we put the oil on top, we have provided a way for the bread to soak the oil in as it cooks.   
Pour some olive oil onto the dough and use the back of the spoon to push it around.  Continue adding oil until you have lightly covered the entire surface of dough. 
 Make sure your oven is preheating at 400°.  
 After he spread the oil all around my husband sprinkled on some rosemary.
Yes, fresh rosemary would taste better, but this works just fine.
Once it is thoroughly covered with oil and seasonings (my husband also likes to sprinkle some kosher salt on top) place it in the oven.   
The total cooking time for the bread is 15-25 minutes
However, 
we like to check ours at the half way point
   and pull it out to spread garlic sauce on top.
No, he did not learn this in Italy, this is just something he likes to do.
Once he has it covered in the garlic sauce, he puts it back in the oven to finish cooking.  

When it is all done, your kitchen will smell divine!
Focaccia is easy to cut with a pizza cutter.

When we eat focaccia we like to dump it in to a mixture of balsamic vinegar and olive oil, or we like to put pesto on top of it.  You can buy pesto in a jar at the store, just stir it up and add it to the top of your bread.  
 Buon appetito!

Focaccia is kind of like a pizza in the sense you can top it with anything you want.   
Most common is olive oil and kosher salt but feel free to try anything:
Rosemary                                 Pesto                                                                                                  Onions                                     Tomatoes                                                                                              Eggplant                                   Margherita Sauce                                                                            Black/Green Olives                  Grilled Green Peppers                                                                                  If you want to add cheese, wait to add it until the bread is almost finished cooking

My New Pillow


In getting ready for surgery, I feel the need to deep clean my house and spruce it up a bit.   
One of the easiest most economical ways to spruce up a room is to add a pillow or two. 

Over Christmas break I changed our curtains in our kitchen.  Our living room and kitchen feed into each other and I thought it would be fun to add pillows that accent the colors of the kitchen curtains.  
So here are the curtains…
and here is my new accent pillow!!!
It is such a simple thing, but I am extremely proud of my pillow and it brings me joy!  

Supplies: 
½ yard of fabric
Rope
Double folded bias tape 3 yards


I wasn’t sure at first if this was going to work out, but it did and I am so happy.   
I took the bias tape and I put the rope inside to make cording.  
Then I took the cording and I sewed it to the right side of one of the squares just to make sure it would stay where I wanted it to.  Then I took the other square, put the two right sides together and sewed around them.  I left about 5 inches of a gap so once I turned it right side out I could stuff it.  Then I hand stitched the hole with clear thread.  Once it was stitched up, I ran it through the sewing machine just to make sure it was securely sealed where the hole used to be.   
Here I am pointing to the point of entry where I stuffed the pillow.   
This is the finished product.   
It’s not perfect, but it’s not bad either!

8 More Days

Have you ever found yourself in an odd emotional funk? 
I have done a good job of putting on a happy face---taking care of daily responsibilities like showing up for work---but now I am tired and I just don’t want to play anymore. 
I have just had one of those weeks where I don’t want to go anywhere or see anyone, I don’t want to get dressed or put together (just give me my sweats and let me pull my hair back in a messy bun) and I just want to disappear, forget about everything and succumb to the sadness. 
Sigh, I am good really...just tired of fighting an emotional, mental, and physical battle.  
I am antsy, anxious, and my patience is just starting to wear thin, but I am almost there...8more days!
              I just want to hurry and get to the 24th so we can have surgery and MOVE ON!!! 
I really hope everything goes well and they don’t have any more bad news.                    Because I’ll tell you what---I am going to end up a 300 pound lady because I just keep eating my blues away.

Taco Ring

Ingredients needed:
Hamburger
Shredded cheese
Crescent rolls
Toppings: lettuce, tomatoes, olives, sour cream, salsa, ranch, etc.



Step #1: Brown your hamburger!
My siblings and I only like our hamburger browned with chopped onions.  My husband on the other hand loves taco seasoning.  It doesn’t matter how you brown your meat or what you add to it, just make sure it is safe and cooked well.

Drain and rinse meat, set it to the side.
Step #2: The Crescent Rolls!
If you have never cooked with crescent rolls, they are awesome!  It doesn’t matter which brand you buy, I personally just buy whatever is the cheapest. 
When you open the can there is a roll of dough, rip apart the individual triangles. 
Now you need to arrange the triangles.  You can use a rectangle cookie sheet or a pizza pan to make a circle.  Whatever you have will be fine.  I have even made this in a deep glass pyrex dish---any dish that can go in the oven will be fine.
First thing, put the fat bottom part of the triangle on the pan and hang the point off the edge.  When you lay down the triangles, slightly overlap them.  (Or if you have an impossible corner to turn on your dish overlap them a lot, don’t worry there is no wrong way to do this!)   
Next, add the browned hamburger and shredded cheese. 
Then take the points and fold them over.  You can tuck the points under as you press them down.  It will look like you are making a wreath.  Or if you are making this for only 2 people, you can make a small straight row, or make them totally individually. 
It doesn't matter, in the end it all tastes the same! 
At some point in time you should start pre-heating your oven to 375°. 
I always forget what temperate and several times I have only done 325°.  The tops turn nice and golden brown but the bottoms are still doughy. 
Finish and place your dish in the oven.  It should cook between 10-15 minutes, and of course it all depends on your oven.  One side of my oven seems to cook hotter than the other side, so I always have to make sure I rotate my dishes to try to get something that is cooked evenly. 
While it is cooking, cut lettuce, tomatoes, olives and anything else you want to put on it. 
Step 3: Decorate and serve!
When it is done decorate it anyway you want.  Notice only one side has tomatoes, I don’t understand tomato haters---I love tomatoes.  For company sometimes I will dust off my cake decorator and load it with sour cream to make cream puffs around the edges.
